Recipes - Breads

At the Lincoln Minute Men colonial dinner, many members brought amazing breads. Some recipes are found below:

Corn Bread

You'll Need:

  • 1 ¼ Cups flour
  • ¾ Cup Corn Meal
  • ¼ cup Sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt (optional)
  • 1 cup skim milk
  • ¼ cup vegetable oil
  • 1 egg beaten

Preparation and Cooking instructions

  1. Heat oven to 400 degrees
  2. grease 8 or 9 inch bread pan
  3. Combine all dry ingredients.
  4. Stir in milk, oil, & egg
  5. Bake for 20-25 minutes

Corn Meal & Molasses bread – also called “Anadama”

You'll Need:

  • 1 package yeast
  • 3 ½ Cups bread flour
  • 1/3 cup yellow corn meal
  • 1 ½ cup boiling water
  • 1/3 cup molasses
  • 1 teaspoon salt
  • 1 Tablespoon butter (or Margarine) – at room temperature

Preparation and Cooking instructions

  1. Pour cornmeal in large bowl
  2. Carefully pour boiling water into cornmeal
  3. stir until smooth
  4. Let stand to cool for about 30 minutes
  5. Stir in Molasses, salt and butter
  6. Place yeast in bread machine pan, bread flour and then cornmeal mixture
  7. Select white bread setting on bread machine and push “Start”!

Blueberry oat bran scones

You'll Need:

  • 1 ½ cups oat bran
  • 1 ½ cups all-purpose flour
  • 1/3 cup light brown sugar (packed)
  • 2 teaspoons baking powder
  • 1 teaspoon cream of tartar
  • 2 eggs
  • ½ cup butter
  • 1/3 cups plain yogurt
  • 1 teaspoon vanilla extract
  • 1 ½ cups blueberries
  • Sugar (to taste)

Preparation and Cooking instructions

  1. Preheat oven to 400 degrees
  2. Grease baking sheet
  3. In a large bowl combine bran, flour, sugar, baking powder and cream of tartar
  4. Cut in butter
  5. In separate bowl, mix eggs, yogurt, and vanilla extract
  6. Blend into dry ingredients
  7. Fold in Blueberries
  8. Pat mixture into buttered baking sheet, cut into wedges
  9. Sprinkle with sugar
  10. Bake for 20 to 25 minutes – until golden brown

Cranberry Nut Scones

You'll Need:

  • 1 package “Betty Crocker Pie Crust Mix”
  • ½ cup nuts – chopped
  • ¼ cup sugar
  • 1 ½ teaspoons baking powder
  • 2 Tablespoons “Half & Half”
  • 1 egg
  • ½ cup cranberries chopped
  • Sugar

Preparation and Cooking instructions

  1. Heat oven to 400 degrees
  2. Combine pie crust mix (dry), nuts, ¼ cup sugar, and baking powder in large bowl
  3. blend well with fork
  4. In separate bowl beat Half & Half and egg
  5. Stir into piecrust mixture
  6. Stir in Cranberries
  7. Pat mixture into buttered baking sheet, cut into 8 wedges
  8. Sprinkle with sugar
  9. Bake for 20 to 25 minutes – until golden brown
