Recipes - Main Courses

At the Lincoln Minute Men colonial dinner, many members brought delicious main courses. Some recipes are found below:

Malone’s One Pot Meal

You'll Need:

  • 2 pounds beef stew meat
  • ¼ cup flour
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 ½ cups beef broth
  • 1 clove garlic, minced
  • 1 bay leaf
  • 4 Carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 stalks celery, sliced

Preparation and Cooking instructions

  1. Put meat in crock pot
  2. Mix flour, salt and pepper, and pour over meat
  3. Stir to coat meat with flour
  4. Add remaining ingredients and stir to mix well
  5. Cover. Cook on low 10 to 12 hours (Optionally on High 4 to 6 hours)
  6. Stir Stew thoroughly before serving

Wiggins Red Flannel Hash

Made with leftovers from the New England Boiled dinner

As a left over dish, ingredients would vary depending upon what was left over from the Boiled Dinner, but would typically contain corned beef, turnips, carrots, potatoes, and beets (from which it gets its name)

You'll Need leftovers from the New England Boiled dinner:

  • 24 ounces chopped corn beef
  • 2 cups chopped beets
  • 6 small to medium sized chopped boiled potatoes
  • 4 large carrots (boiled)
  • 1 large chopped turnip (boiled)
  • ¼ cup cream
  • 1 ½ teaspoon salt
  • 2 Tablespoons ninced onion
  • 1 Tablespoon Minced Parsley
  • ¼ cup beet juice (added for extra coloring)
  • 1/3 pound think sliced bacon (crackled and sprinkled on top)

Preparation and Cooking instructions

  1. Chop the left-over meat and vegetables and mix together
  2. Moisten with a little milk or cream
  3. Season to taste
  4. Melt butter in an iron skillet, and press in the hash
  5. Cook at low to medium heat, or bake in a 350 degree over about 40-45 minutes until nicely browned
