Recipes - Vegetables

At the Lincoln Minute Men colonial dinner, many members brought amazing vegetable dishes. Some recipes are found below:

Lenington’s Sweet Potatoes

You'll Need:

  • 8 Medium sized sweet potatoes (peeled & cooked)
  • ¼ to 1/3 cup brown sugar (optional)
  • ¼ to 1/3 cup orange juice (use with pulp to zest up)
  • Choice of spices - 1 teaspoon nutmeg and cinnamon OR 1 teaspoon all spice
  • ¼ cup rum or sherry (optional)

Preparation and Cooking instructions

  1. Mash with ½ stick butter, brown sugar, and orange juice and spices to taste
  2. Add ¼ cup rum or sherry (optional)
  3. Turn into buttered casserole dish and re-heat when ready

Schudy’s Green Beans in sauce

You'll Need:

  • 4 pounds green beans, chopped
  • 2 red peppers sliced
  • Choice of spices - Salt, coriander, allspice, anise, & pepper

Preparation and Cooking instructions

  1. Make a brown/black roux. With cinnamon, cloves, apple cider and white wine.
  2. Add spices to taste – Salt, coriander, allspice, anise, & pepper
  3. Blanch beans
  4. add peppers at end of blanching
  5. Pour sauce over vegetables
  6. Serve
