Lenington’s Sweet Potatoes
You'll Need:- 8 Medium sized sweet potatoes (peeled & cooked)
- ¼ to 1/3 cup brown sugar (optional)
- ¼ to 1/3 cup orange juice (use with pulp to zest up)
- Choice of spices - 1 teaspoon nutmeg and cinnamon OR 1 teaspoon all spice
- ¼ cup rum or sherry (optional)
Preparation and Cooking instructions
- Mash with ½ stick butter, brown sugar, and orange juice and spices to taste
- Add ¼ cup rum or sherry (optional)
- Turn into buttered casserole dish and re-heat when ready
Schudy’s Green Beans in sauce
You'll Need:
- 4 pounds green beans, chopped
- 2 red peppers sliced
- Choice of spices - Salt, coriander, allspice, anise, & pepper
Preparation and Cooking instructions
- Make a brown/black roux. With cinnamon, cloves, apple cider and white wine.
- Add spices to taste – Salt, coriander, allspice, anise, & pepper
- Blanch beans
- add peppers at end of blanching
- Pour sauce over vegetables
- Serve
